Imagine Sicily in the 80s, where I discovered my passion for cooking at the age of 12 amidst a vibrant kitchen filled with the aromas and colors of fresh vegetables and fruits. While I pursued another passion at the time, I soon realized that cooking brought me unparalleled rewards and satisfaction.
Cooking is a pure joy for me—an effortless pursuit that fills me with immense gratification. Destiny led me to settle in Oahu, a place that epitomizes beauty and grace. It was the "Aloha Spirit" that soothed my heart and instilled in me a sense of belonging—a feeling of being truly at home.
Just as Oahu has unveiled its treasures to me, and its people have shared their love and compassion, I now aspire to share my knowledge and profound appreciation for authentic Italian cuisine. I aim to bring together the diverse styles of Mediterranean and Northern Italian cooking, each with its unique characteristics, while emphasizing the use of raw ingredients. 3 course menu consists of one appetizer, one main dish and one desert of your choice.

In the cooking class you have the option to choose from a wide selection of authentic Italian dishes, where I will teach you step by step how you can also bring a piece of Italy to your home.

Arancini di Riso: Savory Spheres of Italian Delight!
One of my specialties is Sicilian Arancini di Riso, which are made with saffron rice and filled with white mushrooms, gorgonzola cheese, and shallots. These delightful treats boast a crunchy exterior and a creamy interior. They are served alongside a luscious mushroom cream sauce and topped with a chip of Parmigiano Reggiano cheese, culminating in a final touch of Traditional Balsamic vinegar of Modena.

Where Hawaiian Passion meets Italian Flavor
Inspired by an age-old Modenese traditional dish, my tortelloni are filled with a delectable blend of ricotta and Parmigiano Reggiano cheese, accompanied by sautéed spinach. Enhanced with crispy pancetta, shallots, and a touch of balsamic vinegar, this dish boasts a distinct flavor profile that beautifully balances sour, salty, and sweet notes, reminiscent of the charm of our beloved Modena town.
